Here’s two contrasting and easy to make pork loin chop dishes that will get you salivating while you are cooking:

1) Breaded Pork Loin Chops with a Side of Mashed Potatoes (Topped with Cheese, Green Onion and Bacon)

As you can clearly see, this recipe has a really long name, but it does so for all the good reasons. Anyone who has a soft corner for breaded meat is going to fall in love with this dish wholeheartedly. It is irresistibly creamy and delicious. The flavour of cheese, bacon and mashed potatoes perfectly complement the taste of the pork in this dish. The green onions are a refreshing add-on which elevates the texture and gives the dish some much needed crunch. To prepare this dish, you are going to require the following ingredients:

● 1 half pound pork loin chops

● 2 cups of bread crumbs. It is preferable to use panko break crumbs.

● 3 pieces of juicy and delicious bacon

●1 pack of butter and fresh potatoes

● 1 cup of Colby Jack shredded cheese

● 2 whole eggs

● 3 tbsp of butter for the mashed potatoes

● 3 quarters cup of milk for mashed potatoes

● 2 cups of water for mashed potatoes

Start the cooking process by heating the oven to 350 degrees. The next step is to get the bacon cooked. Cook all three slices together in a big skillet. Once the bacon has been cooked, set it aside on paper towel. Do not remove the hot bacon grease inside the pan. It can be used later on.

The following step involves adding 2 eggs to a bowl and getting them scrambled quickly. Now take another bowl and fill it up with 2 cups of bread crumbs. With this done in no time, you can proceed to dipping the pork chop into the egg first and then into the bread crumbs. Repeat the process twice for each pork chop before setting the item on the plate.

Once you are done breading and egging the pork chops, you can put the pan (containing the bacon grease on heat). When the pan has been heated enough, carefully place the pork chops and cook them for 2 to 3 minutes on each side. They need to be cooked till they appear golden brown.

The cooked pork chops should now be baked. Place them in a baking pan. Put the pan in the oven and let the baking go on for around 10 minutes.

As the pork bakes, you can concentrate on making mashed potatoes with butter, milk and water. Place the green onions on the potatoes once they are done. The cheese and crumble bacon should be the final additions to the dish.

2) Apricot Pork Chops with Corn on the Cob

This is a light and refreshing pork loin chop meal that you can get done in minutes. The aim is to bring out a nice oriental flavour. Here’s what you need to get:

● 4 4oz boneless loin pork chops

● A quarter of a cup of chopped onions

● A quarter of a cup of apricot preserves

● 1 tbsp of low sodium soy sauce

● 2 tbsp of minced garlic

● A quarter of a tsp of salt

● A quarter of a cup of sliced green onion

● Cooking spray

● A corn on the cob

A non-stick skillet needs to be put on medium to high heat. The pan should then be coated with cooking spray. Place the pork in the pan. Cook them for 6 minutes on both sides. Take them out.

The next step is to throw in the chopped onions in the pan. Sauté the onions for a minimum of 4 minutes or till they are light brown in colour. Slide the apricot preserves into the pan, pour in the soy sauce, throw in the garlic and spill some salt. Cook this mixture for the next three minutes. Add the pork in the pan and sprinkle some green onions to cap off the dish.

When you serve the dish on a plate, make sure that you place a corn on the cob right beside the apricot preserves.
