Instructions for Baking a Simple Sweet Potato Pie
The cooking begins by rolling pate brisee on a lightly floured work surface. It should be rolled into a 15 inch round. The excess flour can be removed with the help of a dry pastry brush. Place the dough into a 9 inch pie plate. Press the dough near the edges. A one inch overhang should be trimmed all around the dough. The edge can be crimped according to your desired shape. Cover up the dough with a plastic wrap and let the pie chill. It should be firm after 30 minutes of chilling.
Get the oven pre-heated to 375 degrees. Take a medium sized saucepan and fill it up with 2 inches of water. Put this pan on high heat and bring the water to a boil. With the help of a steamer basket, add sweet potatoes to the saucepan and then cover them up. Steaming the potatoes for 1 hour will make the flesh soft enough to be penetrated easily by a fork. To carry out the steaming process successfully, you need to keep adding water to the sweet potatoes. Once the steaming is complete, allow the sweet potatoes to cool down before you peel off the skin with your bare hands. You could also remove the skin by rubbing the sweet potatoes with a paper towel.
The sweet potatoes should now be transferred to the bowl of an electric mixer. Bead the sweet potatoes till they are well mashed. The stringy, unwanted pieces of sweet potatoes should be removed by the paddle attachment of the electric mixer. Clean the paddle attachment once or twice before putting it back into the mixer. This ensures that all the stringy materials from the potatoes have been separated from the fine mash.
Reduce the speed of the mixer before adding butter into the mixture. Beat the mixture till the butter has been well combined. Add in the sugar and the eggs one at a time. Each addition should be followed by a brief period of beating. Then, pour in the allspice, cinnamon, vanilla, nutmeg and lemon juice. Keep beating the mixture till all the ingredients have blended in perfectly.
The well combined mixture should now be poured into the pie crust. Transfer the raw pie to the oven and bake it for the next 50 minutes. A well set centre is the mark of a properly baked sweet potato pie.
